How to select an AC-3 utilisation contactor for an operting voltage of 690V noting that the current in the catalog is defined for 440V?

This can be selected based on the current via the below chart
Noting that highlighted values are equal to the current at 690V, so based on this we can select the compatible contactor

Graphs with electrical durability at 690V in AC-3 gives you values of Ie, which is the value in the graph where the curve ends. For example curve of LC1D25 ends at 17A. So Ie=17A for LC1D25 at 690V.
